Today I'm excited to share a recent product discovery with you: Mighty Nut Powdered Peanut Butter by Peanut Butter & Co.!
I received this to test out and review shortly before we left for our wedding, so I actually took it to Miami with me! Because it's powdered, it's very portable and great to travel with. I love to throw it into my bag in the mornings to be enjoyed with breakfast later at work!
If you're anything like me, you LOVE peanut butter and work it into meals whenever you can. However, if you keep track of your macros (also like me) you know that 1 traditional serving size can quickly deplete your fat allotment for the day. True, nut butters are packed with healthy fats, but as the saying goes, too much of a good thing can be a bad thing. And, let's be honest, it's VERY easy to go overboard with peanut butter. I know I'm not the only one who eats it straight out of the jar from time to time!
Prior to receiving Mighty Nut, I had only ever tried one other brand of powdered peanut butter (that shall go nameless) and I threw it away shortly thereafter. It just didn't taste quite right to me. I've long been a fan of Peanut Butter & Co. - I think of my mom every time I have it as she's actually the one who introduced me to the brand - so I was super excited when I learned about this. The rich flavor is spot-on. (There are also vanilla and chocolate varieties! I can't wait to get my hands on those...)
When I was challenged to create a recipe or snack idea with Mighty Nut, my mind initially went to all of the predictable places: smoothies and baked goods.
...But then I decided to go the not-quite-as-predictable route and sub in Mighty Nut for peanut butter in a savory food. I've always been a big fan of peanut flavors in Asian-style dishes, but between peanuts and oils. such sauces can get very fatty very fast.
I whisked together a quick dressing using about two scoops of Mighty Nut, 2 tablespoons of water, 1-2 tablespoons reduced sodium soy sauce, 1-2 tablespoons rice vinegar, a small splash of sesame oil and a squeeze (or 2!) of honey. Alter the measurements to make this saltier or sweeter - whatever you're craving! Add garlic and this would be excellent on top of noodles! If you like a little heat, add in hot chili oil (with caution). I drizzled this on a simple salad of baby spinach and matchstick carrots.
With 1.5 grams of fat and 6 grams of protein per serving, you've got an awesome substitute for the traditional stuff! As a Weight Loss Specialist, I'm a huge fan of this not only for weight loss but also for weight maintenance. Enjoy the taste of savory peanut butter without worrying about packing on the pounds. The possibilities are practically endless with this little jar of magic!
